Mezze is a twenty-piece service for four with a mirror finish, which means the steel has been polished until it behaves like a small curved mirror lying on the cloth. Candle flame and window light both come back off it. The 18/0 alloy underneath was picked for hardness and rust resistance rather than show, and the pattern carries a limited lifetime warranty.
What a mirror finish does
Polished steel picks up whatever is around it: the color of the napkins, the window, the candles. On a dark cloth that reads as sparkle, on a pale one as a clean silver line beside the plate. It is also the finish that shows fingerprints most willingly, which is the trade you make for the shine.
The case for 18/0
Eighteen percent chromium, no nickel. That combination is harder than the nickel-bearing grades and shrugs off rust in ordinary kitchen use, which is why so much high-turnover flatware specifies it. Knife blades in particular hold an edge better when the steel is on the harder side.
